CHOCOLATE TRUFFLES




1 (6-ounce) package semisweet chocolate morsels

3 tablespoons unsalted butter

3 tablespoons powdered sugar

3 egg yolks

1 tablespoon rum

Cocoa

Place chocolate morsels in top of a double boiler; bring water to a boil. Reduce heat to low; cook until chocolate melts. Add butter and powdered sugar, stirring until sugar dissolves. Remove from heat.

Add egg yolks, one at a time, beating with an electric mixer after each addition. Stir in rum. Pour mixture into a bowl; cover, and let sit for 12 to 24 hours in a cool, dry place. Do not refrigerate mixture.

Shape mixture into 1-inch balls; roll in cocoa. Freeze for 1 hour. Store in an airtight container in refrigerator.

Makes 2 dozen.

These truffles can be stored in small containers and presented to your guests as gifts.

For example, place a few in large plastic eggs and give them out during Easter season to your guests...or

Place in a plastic champagne glass and use one for each guest at the dinner table.....
