CHORIZO CANAPES

2 slices sandwich bread

1 ounce chorizo sausage, sliced thin, skin removed

1 hard-boiled egg, sliced

8 rolled anchovies

8 pimiento-stuffed green olives

Fresh, good-quality bread is best. Remove the crusts from the bread and spread a little butter. Cut each bread slice into 4 squares. Cover each with a slice of chorizo, a slice of egg, then an anchovy, and top with an olive.

Spear everything together with a toothpick.
