CHUNKY SHRIMP SPREAD
3 cups water
1 pound unpeeled fresh shrimp
1/2 cup minced onion
1 tablespoon fresh lemon juice
1/2 teaspoon curry powder
1/4 cup plus 2 tablespoons mayonnaise
1/4 teaspoon salt
1/8 teaspoon white pepper
Parsley sprig
Bring water to boil; add shrimp, and cook 3 to 5 minutes. Drain well; rinse with cold water. Chill.
Peel and devein shrimp; coarsely chop. Add remaining ingredients except parsley, mixing well; chill. Garnish with parsley, if desired.
Serve spread with party-size rye or whole wheat bread.
Makes 2 cups.
