EGG AND TUNA WRAPPED IN HAM
2 small hard-boiled eggs
4 teaspoons mayonnaise
4 teaspoons tuna
1 large, thin slice boiled ham, cut in 4 long strips
1 teaspoon minced parsley
Prepare the tuna with 2 teaspoons of mayonnaise, blend well.
Cut the eggs in halves crosswise and trim the ends so that the halves sit flat. Top each half with 1/2 teaspoon of the mayonnaise, then with 1 teaspoon of the tuna. Wrap a strip of ham around the sides of the egg, covering the white.
Secure the seam of the ham with a toothpick.
Sprinkle with parsley.
