FRESH SPINACH SALAD

Spinach, fresh, washed and torn into bite sizes Mushrooms, washed and sliced 3/4 cup olive oil

1/4 cup tarragon vinegar

1 teaspoon garlic, minced

1 teaspoon onion, minced

1 teaspoon sugar

1/4 teaspoon dry mustard

1/2 teaspoon celery salt

1 cup Feta cheese, crumbled

1 cup walnuts, toasted and chopped

Several hours before serving this salad, combine the oil, vinegar, garlic, onion, sugar, dry mustard and celery salt. Blend well and refrigerate. At serving time, toss the spinach, mushrooms, cheese and walnuts with the dressing and serve.
