Fried Cheese with Shallot Dressing
1/2 pound fairly mild melting cheese, 1/2 inch thick, then cut in 1 inch squares
Flour for dusting
2 eggs, lightly beaten with 2 teaspoons water
Bread crumbs
Oil for frying
DRESSING
2 tablespoons olive oil
2 teaspoons vinegar
4 teaspoons minced shallot
2 teaspoons minced parsley
1/2 teaspoon small whole or chopped large capers
In a cup combine the dressing ingredients. Dust the cheese pieces with flour, dip in egg, then in the crumbs.
In a skillet, heat the oil at least 1/2 deep to about 380° and fry the cheese quickly until golden on both sides. (You can also deep fry). Drain.
Sprinkle the dressing over the cheese and serve immediately.
