Grilled Meat Sandwiches




3 ounces fresh pork loin, finely chopped

1 1/2 ounces Morcilla, finely chopped (look for it at the deli)

1 chorizo sausage, skinned and finely chopped

1 ounce bacon, finely chopped

1 tablespoon olive oil

Twenty slices long crusty loaf bread, 1/4 to 3/8 inches each

Softened butter

Marinade

1 large clove garlic, minced

1/4 teaspoon crushed coriander seed

1/4 teaspoon freshly crushed cumin seed

1/4 teaspoon paprika

1/2 dried red chili pepper or 1/4 teaspoon crushed red pepper

1 tablespoon olive oil

In a bowl combine the marinade ingredients, mix in the pork loin, morcilla, chorizo, and bacon. Marinate for several hours or overnight.

Heat the oil in a skillet and sauté the marinated mixture over medium heat, stirring, for about 5 minutes. Spread about 1 tablespoon of this mixture on half of the bread slices, then cover with the remaining slices. Butter the outside of the bread, then cook, pressed flat in a sandwich grill or in a skillet. Turn once and continue grilling until golden on the other side.
