Ham filled Mushroom Caps

3 tablespoons finely diced cured ham, cut from a 1/8-inch-thick slice

2 large garlic cloves, minced

2 tablespoons minced parsley

1/2 dried red chili pepper or ¼ teaspoon crushed red pepper

2 teaspoons fruity olive oil

12 medium mushroom caps, brushed clean

In a bowl mix together the ham, garlic, parsley, chili pepper, and olive oil. Fill the mushroom caps with this mixture.

Arrange in a baking dish. Bake at 350° for about 15 minutes.
