OLD FASHIONED MEATLOAF

1 small onion

1 garlic clove

2 eggs

1 1/2 lbs. ground beef

1/2 cup dry bread crumbs

1/4 cup tomato puree

2 tablespoons chopped fresh parsley

1 teaspoon salt

1/2 teaspoon dried thyme

Pinch cayenne pepper

3 slices bacon

Heat the oven to 350 degrees. Chop the onion and the garlic. In a large bowl, beat the eggs lightly to mix. Add all the ingredients except the bacon and mix until combined. Pack the beef mixture into a loaf pan and cover with the bacon slices.

Bake until browned, 1 hour to an hour and 15 minutes. Let sit 10 minutes before slicing and serving.

Makes 12 slices.
