Open Faced Pizza Sandwiches
1/2 pound ground chuck
1/4 cup chopped onion
2 tablespoons chopped green pepper
1 (6-ounce) can tomato paste
1 tablespoon water
1/2 teaspoon dried whole oregano
1/4 teaspoon pepper
1/8 teaspoon garlic powder
2 whole wheat English muffins, split
1/2 cup (2 ounces) shredded mozzarella cheese
2 tablespoons grated Parmesan cheese
4 pimiento-stuffed olives, sliced
Combine beef, onion, and green pepper in a skillet. Cook over medium heat, stirring to crumble, until beef is browned and vegetables are tender. Drain in a colander, and pat dry with a paper towel.
Combine beef mixture and next 5 ingredients. Spread over cut sides of muffin halves; top with cheese. Bake at 400 degrees for 5 to 6 minutes or until sandwich is heated and cheese is bubbly.
Garnish with sliced olives.
