SHRIMP IN PROSCIUTTO
40 shrimp
1/2 pound Prosciutto, thinly sliced
2 tablespoons sweet rice wine vinegar
2 tablespoons champagne vinegar
1/2 cup olive oil
2 garlic cloves, crushed
Cook shrimp in boiling water 2-3 minutes until done. Drain, cool in cold water, drain again, and set aside in glass bowl. Mix vinegar, oil and garlic. Pour over shrimp, stirring to coat thoroughly. Refrigerate overnight.
To serve, wrap each shrimp in a narrow piece of Prosciutto, overlapping edges to hold in place.
