SNOWFLAKE PUDDING

2 envelopes unflavored gelatin

1 cup sugar

1/2 teaspoon salt

1 1/4 cups milk

1 teaspoon vanilla extract

1 (3 1/2 ounce) can flaked coconut

2 cups whipping cream, whipped

Raspberry or Strawberry Sauce

Combine first 3 ingredients; gradually stir in milk. Cook over medium heat until sugar and gelatin dissolve. Chill until the consistency of unbeaten egg white. Stir in vanilla. Fold in coconut and whipped cream. Pour into a lightly oiled 1 1/2 quart mold. Chill 4 hours or until firm. Unmold onto serving platter, and top with raspberry or strawberry sauce.
