SWEET AND SOUR MEATBALLS
1 1/2 lbs. lean ground beef
1 cup fresh bread crumbs
1 egg slightly beaten
4 tsp. beef flavor instant bouillon
1 1/3 cups apricot preserves
2 tbs. lemon juice
In large bowl, mix meat, crumbs, egg and 2 tsp. bouillon. Shape into small 1 inch balls. In large skillet, brown meatballs.
Remove from pan and pour off fat. In skillet, combine preserves, lemon juice, and remaining 2 tsp. bouillon. Cook over low heat and stir. Add meatballs, simmer uncovered for about 10 minutes.
Makes about 48 meatballs.
