TOASTED PECANS
2 to 3 cups pecan halves
1/4 cup margarine
Salt to taste
In a swallow pan or cookie sheet with rim, put a layer of pecans. Shake the pan gently to distribute the pecans evenly. Dot the pecans with margarine and place in a preheated oven at 325 degrees for 5 minutes to melt the margarine. Remove and stir. Shake the pan each time you stir to level the pecans. Return to oven for 10 minutes then stir again. Repeat the process until the pecans are toasted but not too brown. Sprinkle with salt and stir. Let them cool in the pan.
To maintain crispness, do not place the pecans in a bowl until they have cooled.
