Vegetable Pockets
1/2 cup coarsely shredded lettuce
1/2 cup alfalfa sprouts
1/2 cup (2 ounces) shredded Cheddar cheese
1/2 cup shredded carrots
1/4 cup raisins
1/4 cup chopped walnuts
2 (6-inch) pita bread rounds
Yogurt Dressing
Combine lettuce, alfalfa sprouts, cheese, carrots, raisins, and walnuts, tossing gently.
Cut pita bread rounds in half; spoon vegetable mixture into bread, and top with Yogurt Dressing.
Serve immediately.
Makes 4 servings.
Yogurt Dressing:
1/4 cup plain low-fat yogurt
2 teaspoons lemon juice
2 teaspoons honey
Combine all ingredients; mix until well blended.
