WESTERN OMELET




2 tablespoons butter

8 large eggs

1/4 cup chopped green bell pepper

1/4 cup chopped red bell pepper

1/3 cup finely chopped red onion

3/4 cup milk

3/4 cup chopped ham

1/2 teaspoon salt

Dash of ground pepper

Melt butter in skillet. Beat eggs and gradually add remaining ingredients. Pour mixture into hot skillet. Cook on medium until egg liquid cooks. Turn and cook on other side. (You can flip the omelet by placing a large dinner plate on top of the skillet, turn, then slide omelet back onto skillet).

For a party, coat a muffin pan with cooking spray. Fill each with omelet mixture and bake in oven at 350° for 10-15 minutes or until middle is done (test by inserting toothpick, if dry, it’s done).
